Cauliflower rice is great for ANY meal of the day. These savory, low-carb (and gluten-free) Cauliflower Mediterranean Frittata Muffins is perfect for brunch or or on-the-go breakfast! Serve them warm or at room temperature.
Cauliflower Mediterranean Frittata Muffins
Ingredients
- 4 cup Cauliflower Rice frozen, thawed
- 1/4 cup Onion white, diced
- 1 tbsp Basil fresh, Chopped
- 1 tbsp Chives fresh, Chopped
- 1 cup Feta Cheese
- 2 tbsp Sun Dried Tomatoes Drained, Rinsed, and Chopped
- 4 Egg large
- 1/4 tsp Salt
Instructions
- Preheat oven to 350ºF.
- Defrost cauliflower rice.
- Line a muffin pan with paper liners.
- Combine all ingredients in a large bowl. Evenly divide among muffin tins and bake for 25 minutes.
Notes
Standard recipe makes 8 regular sized muffins or 16 mini muffin bites! Cooking time will need to be reduced for smaller muffin tin sizes.
