This is a simple go-to. Easy to prepare, hearty, and of course – delish! I always like to make a big pan, and whatever is leftover, freeze into individual servings for those days when all you have to do is pull out your meal from the freezer.
Roasted Sweet Potato and Sausage Bake
Ingredients
- 6 Sweet Potatoes peeled, washed, and cut into 1 inch chunks
- 1 large sweet onion finely chopped
- 2 pounds sweet Italian sausage cut into 1 inch chunks
- Fresh garlic to taste
- Sea salt and pepper to taste
Instructions
- Preheat oven to 450 degrees Fahrenheit.
- Put all ingredients in a bowl and mix until well combined. Once mixed, place mixture
in roasting pan and put in oven. - Cook 1 hour, stirring occasionally to insure browning on all sides.
